Ingredients
- 2 tablespoons oyster sauce
- 1 tablespoon honey
- 2 tablespoons chilli oil with chilli flakes Lao Gan Ma (add regular chilli oil, add 1 1/2 tbsp chilli flakes)
- 1/4 teaspoon black pepper
- 3 tablespoons unsalted butter
- 10 cloves garlic, chopped
- 2 pounds peeled and deveined 31/40 shrimp
- 1 tablespoon Shaoxing wine, rice wine, or white wine (if you don’t want to consume alcohol in your cooking, use water)
- 3 green onion, chopped
- 1 red or green chilli, sliced (optional)
- handful cilantro, roughly chopped
- fried shallot or french onion for garnish
- lemon or lime wedge
Instructions
In a small mixing bowl, combine the oyster sauce, honey, chilli oil with chilli flakes, and black pepper. Set aside.
Melt butter in a large skillet over high heat. Saute the garlic with the garlic sauce for about a minute until the edges are a bit golden.
Stir in the shrimp quickly with the garlic.
Pour the wine into the skillet and deglaze.
Stir in the sauce mixture and turn the heat off. Cook the shrimp for not more than 2 minutes.
Add in the chopped green onion, chilli, and cilantro. Stir.
Before serving, garnish with fried shallot and lemon or lime wedges.
