  • 1 lb ground beef or chicken (your choice!)
  • 1 cup cooked rice
  • 1 cup refried beans
  • 2 cups red enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas
  • 1 onion, finely chopped

Instructions:

  1. Prepare the Meat: In a skillet over medium heat, cook the chopped onions until translucent. Add garlic, followed by the meat. Sprinkle in cumin, chili powder, salt, and pepper. Cook until meat is browned and fully cooked. Drain excess fat.
  2. Assemble the Burritos: Lay out a tortilla. In the center, spread a quarter of the refried beans, followed by the meat mixture, and rice. Fold in the sides and roll up tightly.

  5. Serve: Plate up and garnish with optional toppings.
